Madurese Satay (Sate Madura) is one of Indonesia’s most beloved street foods, known for its richa peanut sauce and smoky, tender meat. Originating from Madura Island, this dish is a must-try for satay lovers. Here’s a step-by-step guide to making authentic Sate Madura at home.
Ingredients:
For the Satay:
• 500g chicken or beef, cut into small cubes
• 2 tablespoons sweet soy sauce (kecap manis)
• 1 teaspoon salt
• 1 teaspoon ground coriander
• 1/2 teaspoon turmeric powder
• 2 cloves garlic, minced
• 1 tablespoon vegetable oil
• Bamboo skewers, soaked in water for 30 minutes
For the Peanut Sauce:
• 150g roasted peanuts, ground
• 2 cloves garlic, minced
• 2 red chilies, finely chopped (optional for spice)
• 2 tablespoons sweet soy sauce (kecap manis)
• 1 tablespoon palm sugar or brown sugar
• 1/2 teaspoon salt
• 200ml coconut milk
• 1 teaspoon lime juice
For Serving:
• Steamed rice or lontong (rice cakes)
• Fried shallots (for garnish)
• Fresh cucumber slices
Instructions:
1. Marinate the Meat:
In a bowl, mix the chicken or beef with sweet soy sauce, salt, ground coriander, turmeric powder, minced garlic, and vegetable oil. Let it marinate for at least 1 hour (or overnight for better flavor).
2. Prepare the Peanut Sauce:
In a pan, heat a little oil and sauté the minced garlic and red chilies until fragrant. Add the ground peanuts, sweet soy sauce, palm sugar, and salt. Stir well. Pour in the coconut milk and simmer until the sauce thickens. Add lime juice for a slight tangy kick. Set aside.
3. Grill the Satay:
Thread the marinated meat onto bamboo skewers. Grill over charcoal or a hot grill pan, basting with a little sweet soy sauce. Turn frequently until the meat is cooked through and slightly charred.
4. Serve and Enjoy:
Arrange the satay on a plate and generously drizzle with the peanut sauce. Sprinkle fried shallots on top and serve with lontong or steamed rice, alongside fresh cucumber slices.
