Sate Padang is one of the signature cuisines of Minangkabau, famous for its thick, spice-rich sauce. It usually uses beef or offal such as tongue and liver. Here is a complete recipe to make delicious Sate Padang.
Ingredients:
• 500 grams of beef (can also use beef tongue or other offal)
• 1 stalk lemongrass, bruised
• 3 kaffir lime leaves
• 2 bay leaves
• 1 liter of water
• 2 tbsp rice flour, dissolved in a little water
• Skewers as needed
• Oil for frying
Ground Spices:
• 6 cloves garlic
• 8 shallots
• 3 candlenuts, roasted
• 2 cm turmeric, roasted
• 1 tbsp coriander, roasted
• 1 tsp cumin, roasted
• 1 tsp salt
• 1 tsp palm sugar
• 1/2 tsp pepper
• 5 red chilies (adjust to taste)
Instructions:
1. Boil the Meat
Cut the meat as desired, then boil it with kaffir lime leaves, bay leaves, and lemongrass until tender. Remove, drain, and cut into cubes.
2. Sauté the Spices
Blend all the spices, then sauté until fragrant. Add them into the meat broth and mix well.
3. Make the Thick Sauce
Add the rice flour mixture into the sauce, stirring until it thickens.
4. Grill the Sate
Skewer the cooked meat pieces and grill over charcoal or a grill pan until browned.
5. Serving
Serve the sate with the thick sauce poured over and lontong as a side dish.
