Gulai is a popular Indonesian dish known for its rich and creamy curry-like sauce, infused with a blend of aromatic spices. It is commonly made with beef, chicken, or lamb, and cooked in coconut milk. Here is a complete recipe to make delicious Gulai.
Ingredients:
• 500 grams of beef, chicken, or lamb (cut into pieces)
• 1 liter of coconut milk
• 3 kaffir lime leaves
• 2 bay leaves
• 1 stalk lemongrass, bruised
• 3 cm galangal, bruised
• 2 tbsp cooking oil
• 1 tsp salt
• 1 tsp sugar
• 1/2 tsp turmeric powder
• 1/2 tsp cumin powder
Ground Spices:
• 6 cloves garlic
• 8 shallots
• 3 candlenuts, roasted
• 3 cm ginger
• 2 cm turmeric, roasted
• 1 tbsp coriander, roasted
• 1 tsp cumin
• 1/2 tsp black pepper
• 5 red chilies (adjust to taste)
Instructions:
1. Sauté the Spices
Blend all the spices into a paste. Heat oil in a pan and sauté the spice paste along with kaffir lime leaves, bay leaves, lemongrass, and galangal until fragrant.
2. Cook the Meat
Add the meat to the pan and stir until it changes color. Let it absorb the spices for a few minutes.
3. Add Coconut Milk
Pour in the coconut milk gradually while stirring to prevent curdling. Add salt, sugar, turmeric powder, and cumin powder. Let it simmer over low heat.
4. Slow Cooking
Cook the dish for 45 minutes to 1 hour, stirring occasionally, until the meat becomes tender and the sauce thickens.
5. Serving
