Ingredients
- Fish: 1 goldfish
- Rank: 5 young rattan stalks
- Water: 2 glasses of hot water
Ground spices
- 1 tablespoon andaliman (a type of Sumatran pepper)
- 1 stick of balakka wood
- 2 tablespoons roasted rice flour
- 3 cloves of red onion
- 25 cayenne peppers
- Salt to taste
- 1 tsp stock powder
Iris Seasoning
- 4 red onions (sliced)
Grilled Fish Seasoning
- 1 tbsp turmeric powder
- 1 tsp ground pepper
- 1 tsp coriander powder
- Salt to taste
How to make
1. Fish Preparation: Rub the goldfish with pepper, coriander and turmeric powder. Leave it for a few minutes so that the flavors absorb.
2. Grilling Fish: Grill the fish over medium heat until cooked, don't let it get too dry.
3. Processing Young Rattan: Peel the skin of the rank (young rattan), take the soft inner part, wash it clean, then boil it briefly.
4. Preparing Balakka Wood: Scrape off the outer bark of the balakka wood and remove the green part. Soak the green balakka wood shavings in hot water, then strain.
5. Make ground spices: Puree the chilies, shallots and andaliman. Add salt and stock powder to it.
6. Mixing the spices: Mix the ground spices with the hot sauce made from balakka wood. Add roasted rice flour and mix well. Taste correction.
7. Add Pangkalan and Fish: Add the prawns to the sauce, stir until evenly mixed. Add the grilled fish to the sauce and drizzle with the hot sauce.
8. Serving: Holat Fish is ready to be enjoyed! Serve with sliced red onions on top for added flavor.
