Nasi Liwet is a traditional Indonesian dish, especially popular in Solo and Sundanese cuisine. This rice is cooked with coconut milk and aromatic spices, giving it a rich and savory flavor. Here’s a simple recipe for making Nasi Liwet at home.

Ingredients:

2 cups of rice

400 ml water

200 ml coconut milk

2 bay leaves

2 stalks of lemongrass, bruised

3 cloves of garlic, finely chopped

5 shallots, thinly sliced

1 teaspoon salt

1 teaspoon sugar

Side Dishes:

Shredded chicken

Fried tofu and tempeh

Spicy shrimp paste sambal

Fresh vegetables (cucumber, basil, cabbage)

Fried salted fish

Marinated boiled eggs

Instructions:

1. Sautéing the Spices:

o Heat a little oil in a pan.

o Sauté the garlic and shallots until fragrant and slightly golden.

2. Cooking the Rice:

o Rinse the rice until clean, then place it in a rice cooker or pot.

o Add coconut milk, water, bay leaves, lemongrass, salt, and sugar.

o Pour the sautéed spices into the rice and mix well.

o Cook the rice until fully cooked and fluffy. If using a rice cooker, press the "cook" button and wait until it's done.

3. Serving:

o Serve the warm Nasi Liwet on a plate.

o Add shredded chicken, fried tofu and tempeh, salted fish, sambal, and fresh vegetables as desired.

o Nasi Liwet is ready to be enjoyed!
