Ingredients

Main Ingredients:

500 grams of beef (preferably brisket or shank)

2 liters of water

3 bay leaves

2 stalks of lemongrass, bruised

4 kaffir lime leaves

1 piece of galangal, bruised

2 tbsp cooking oil

Spice Paste:

5 shallots

4 cloves of garlic

4 candlenuts, roasted

1 tsp coriander seeds, roasted

½ tsp cumin, roasted

3 kluwek nuts, soaked in warm water and mashed

1 small turmeric root, roasted

Salt and sugar to taste

Steamed white rice

Blanched short bean sprouts

Cooking Instructions

1. Boil the Beef

Boil the beef in 2 liters of water until tender. Remove the beef, cut it into small pieces, then return it to the broth.

2. Sauté the Spice Paste

Heat oil in a pan and sauté the spice paste along with bay leaves, kaffir lime leaves, lemongrass, and galangal until fragrant and well-cooked.
